The wait for the weekend is over. Because now, I can also buy the most delicious strawberry, fresh from the field, on weekdays. Located directly on the train station, now stands a funny Erdbeerebude. I don’t know if this is only a German thing. But here, you’ll see what I mean. Too bad that this has not opened early already in the morning, so I could buy strawberries twice a day. Because strawberries are always a good idea :-) But sometimes, it’s worth waiting a bit, especially if the seller reserves you ‘the prettiest strawberries in town’. Well, good connections are really important for food :-)

My favorite way to eat strawberries is just to put them in my mouth. I don’t need something around them, but now and then, when a few strawberries have the chance to arrive at my home (after all, the journey takes at least 15 minutes), there are also some varieties in my strawberry Kingdom‘; Last time it was a delicious strawberry-rhubarb layer cake with Rosemary and white chocolate. Today, there is some un-fussy strawberry galette. But don’t panic; no-frills does not mean boring. Because you’ll never find boredom here. If you like, you can add one or two blob(s) creme fraiche too. Nothing more!

Dough:
Put all ingredients in a bowl and knead by hand until everything is combined. Refrigerate for at least 30 minutes. Roll out dough in a circle shape.
filling:
Cut off the green part of the strawberries and cut them into halves. Mix with lemon slices, sugar, salt and starch. Spread ground almonds in the middle of the dough. Make sure it stays a three fingers wide margin. Place the strawberries on the almond flour and fold the dough over it. Put for 30 minutes in the freezer. Meanwhile, preheat oven to 180 ° C. Before baking, mix egg yolk and milk and brush the edge of the Galette . Sprinkle with brown sugar and bake for about 20 - 25 minutes.
